Peanut Butter Cookies

We all know that peanut butter is a much-loved household staple. We love it as a sandwich spread or even as a dip with some freshly cut apples (ah, the sweet and salty combo - yum!), but have you ever used it to make cookies?

The Proof is in the Peanut
As well as being delicious, peanuts also have a stack of health benefits. Peanuts are low in saturated fats, free from cholesterol and gluten, and are also a low GI food. As well as being a fabulous source of fibre and healthy fats, peanuts also have the highest protein content of any nut.
So, now that you're convinced that peanut butter cookies are a good choice, let's get to the recipe!

Fresh is Best: Make Your Own Peanut Butter
Ingredients:
First, you'll need to make your peanut butter in your NutraMilk. For this, you'll need:
2 cups (275g) of peanuts
1/8 teaspoon of salt (optional)
Method:
Add your peanuts and salt to the NutraMilk container.
Press Butter, and set for 2-3 minutes.
Press Start.
For an even creamier butter, mix for another 1-2 minutes.

Cookie time!
Ingredients:
For the cookies, you'll need:
150g porridge oats
100g peanut butter
35g brown rice flour
50ml maple syrup
60g coconut oil, melted
50g coconut sugar
Method:
Preheat your oven to 190*C and line a baking try with baking paper.
Place all of the cookie ingredients into the NutraMilk container and press Mix (do not change the default time).
Use a large spoon to scoop out the cookie dough and shape into balls on the baking tray. Press down lightly to form a cookie shape.
Bake for 10-15 minutes or until golden brown.
